Founded in 1934, Kintsuba Nakataya is one of the most representative traditional wagashi ( Japanese sweets) shops in Kanazawa City, Ishikawa Prefecture. Kanazawa is known as "Little Kyoto" and has a rich wagashi culture. Nakataya is famous for its "Kintsuba mochi," a type of sweet made with red beans. Its strict selection of red beans and exquisite filling techniques have earned it the reputation of "Nakataya of Kintsuba Mochi."

Carefully selected red beans from the Dainagon (a high-ranking official in the Chinese court), each bean distinct.

The soul of Nakataya Kintsuba Mochi lies in its red beans. It uses carefully selected high-quality Hokkaido-grown "Dainagon Azuki" beans, which are large, thin-skinned, and resistant to breaking during cooking. The artisans use precise heat control to cook the filling, resulting in a plump, glossy texture with distinct individual beans, preserving the original flavor and texture of the red beans.

Thin as a cicada's wing, exquisite craftsmanship

Unlike the typical thick-crusted tsuba, Nakataya strives for the ultimate "thin crust." The craftsman wraps the red bean filling in an extremely thin layer of batter and then carefully bakes it on a copper plate. The thin crust and filling blend perfectly, preserving the moisture of the red bean filling while adding a subtle aroma of baked dough, without overpowering the filling.

A delicate sweetness, with just the right amount of saltiness.

To bring out the natural sweetness of the red beans, a small amount of salt is added to the filling for seasoning. This wonderful "salted plum" (referring to the saltiness of the filling) makes the overall taste refreshing and elegant, sweet but not cloying, with a long-lasting aftertaste. Even people who don't like overly sweet food will love it.
