The soul of this cake lies in matcha. The tea ring uses only "Kinten-kaku" matcha , personally blended by Japan's chief tea taster, Haruhide Morita.
This is a top-grade matcha with a vibrant green color, a strong sweetness, and very little bitterness (usually used only for strong tea in tea ceremonies), worth over 50,000 yen per kilogram. Therefore, the cake exhibits a completely natural, deep emerald green color, requiring no artificial coloring.
